Mystery Tacos

Not being overly familiar with Mexican cooking, I'm not sure what you'd call these. Marinated beef strips, Jalapeno Smoked beef sausage sauted with Jalapeno and bell pepper. Laid on flour tortillas covered with cheese and topped with tomatoes and sour cream. Messy, nice and hot and tasted awesome :{)))

Just the beginning of a fine soup. About two pounds of Black Drum filet, 3/4 lb. of Jalapeno Smoked Beef sausage, browned out together with bacon dripping.(well, they were just starting the process.)

Water and potatoes added and begins the simmering process. About an hour later, the milk and cheddar cheese will get added and it'll be good eating for several days :{)))

Steak and Eggs with a Twist

Steak and Eggs with a Twist

A little south Texas inspiration was cooked up in this one. Using some leftover marinated steak, Jalapeno and Bell peppers to start out. Toasting up several slices of French Bread, putting a little shredded cheddar cheese on top. Followed by a couple of slices of fresh tomato. Then came the the fried up steak, some more cheese, two "over easy" eggs, topped with more cheddar and a dollop of sour cream.

"Overkill" my answer to dinner this evening. Finishing off the marinated steak and sausage, and not wanting to waste any. Also not wanting to slim it down either, by making a second sandwich for another time. I used what was left. Held off on the sour cream topping, and in doing so, it wasn't quite as messy :{)))
